1 lb. linguine
2 tbsps. extra virgin olive oil
2 cloves garlic peeled and minced
10 large basil leaves chopped
1 hot red chili pepper seeded and minced (optional)
1 can anchovies drained
2 cups chopped black olives
2 tbsps. tomato paste
1/2 cup capers (or more if you like)
1 pound ripe tomatoes seeded and chopped or 1 can whole tomatoes (good quality)
salt and pepper
Parmesan cheese

Heat oil in good heavy pan and fry garlic, basil and chili for 1 minute, add remaining ingredients and simmer for 45 minutes, stirring occasionally. Toss with pasta and Parmesan.
