Heat butternut squash in microwave, turning over once until softened sufficiently to peel. Cut in two and scoop out seeds. Place back in microwave and cook until soft enough to be cut into smaller pieces and blended using hand mixer. Mix until desired eating consistency, adding and mixing in about 1/2 c butter or butter substitute per approximately 2 quarts of mashed pumpkin. Fill quart freezer bags. We double bag and put on date. This is scrumptious thawed and heated with no additions. Naturally sweet, satisfying--and healthy.
