Italian Rice Pie Recipe

Crust
2 1/2 cups flour
1/2 stick butter or margarine
1/2 cup sugar
1 tbsp. baking powder
3 eggs
1/2 tsp. vanilla

Filling:
1/2 cup rice[uncooked]
1 quart milk
1 lb. ricotta cheese
1 1/2 cups sugar
1 tbsp. lemon juice
rind of 1 lemon
6 eggs

Crust
Mix all crust ingredients together for regular pie crust. Roll out to fit 12 inch pie pan.

Filling
Cook rice and milk together very slowly until milk is completely absorbed. Cool. With egg beater, mix eggs, cheese, sugar, lemon juice and rind. Add to cooled rice and mix. Pour into shell.

Bake at 300 degrees for 1 1/2 hours. Change heat to 325 degrees for last 15 minutes.
