2 tsp olive oil
1/2 c. chopped white onion
1/2 cup shredded carrots
1/2 c. chopped red or green bell pepper
1 1/2 c. chopped summer squash (zucchini)
1 c. spinach
1/4 tsp ground black pepper
4 tbsp fat free cream cheese
4 (7-inch) whole wheat tortilla

Directions:

Heat oil in skillet over medium heat. Add onions, carrots, and bell pepper, cook for three minutes. Stir in the summer squash and cook another three minutes. Add spinach abd season with pepper. Remove from heat and allow to cool before assembling wraps. Spread one tablespoon of cream cheese on each tortilla. Add the vegetables, roll tight, and cut each wrap in half.
