Ingredients: 1 lb. macaroni cooked for only 4-5 mins. 1 cube butter 1/2 c. flour 5 1/2 c. milk 1 tsp. salt 1/4 tsp. cayenne pepper 1/4 tsp. pepper 3 c. shredded Cheddar cheese ( or Longhorn) 1 1/2 c. any other type of cheese (your choice) save a little for the top.

Directions:- Sauce: In a medium size sauce pan melt butter and then add flour. Stir. Cook for 1 - 2 mins to remove any pasty taste. Gradually add milk and cook over medium-high heat stirring with a whisk until creamy. Add salt, red pepper, black pepper. Taste for your approval. When sauce is done, turn the heat off and add 3 cups shredded Cheddar cheese. This way the cheese won't become stringy because of too high heat. Place macaroni in baking dish and pour sauce over and mix. Sprinkle reserved cheese over the top and place in the oven just long enough to melt cheese. |

Notes: - Sometimes I would serve this dish without placing in the oven ( this way it is milky, just the way our family liked it) and if it was hot the heat melted the cheese enough to enjoy. If you need to wait on some other dish, then the oven would keep it warm I prefer Longhorn to Cheddar cheese because some of our family members do not like the taste of a strong cheese.
