3 c. flour
tsp. baking powder (optional)
tsp. salt
1/3 c. lard
1 c. warm water approx. (not hot!)

I listed the baking powder because some receipes list this, but I have never used it in this receipe.

- Place the above ingredients into a large bowl and mix with your hands until the size of a peas. Add the warm water and knead dough in the bowl until soft and workable and not too sticky. Place covered bowl in a warm oven ( 200 degrees) for about 30 mins. Take bowl out.
Pinch off dough into small balls (keep covered). Roll out thin and fry on an ungreased hot griddle. Turn tortilla and cook on other side.
Dough can be used immediately, or placed on a counter top to be used later in the day.
Joslin uses this receipe but sometimes uses Crisco shortening instead of lard. Lard is used in Mexican cooking because it gives a distinctive taste to the food.

- Uncle George made the best tortillas we all enjoyed. His method of cooking was to cook outside, using a one-burner cooker and a flat cast iron skillet. His tortillas were as thin as he could make them, and he would make-up a batch and freeze them. He was married to my sister, Ruth, for over 50 yrs. He died from a cancerous brain tumor. Good ol' UG!
