Dave's Original (15Nov2007)* BAKED Chicken Breasts and Potatoes

2lbs of boneless skinless Chicken Breast's
(Buy Perdue when they'll on sale and freeze them-there's a reason they cost more)
or get all natural chicken breasts at 'Whole Foods' (also known as 'Whole Wallet' **) or another organic market..
Progresso Bread Crumbs (Italian Style Preferred over the Regular ones)
2 Eggs
3-4 tbl spoons of Kikkoman Roasted Garlic Teriyaki Marinade & Sauce
4 Baking Potatoes
Garlic Powder
AMERICAN Curry Powder (Blend of Cumin, Tumeric, Coriander, Black Pepper, Fenugreek, Red Pepper, Ginger, Celery and Cardamon)
Lawrey's Seasoned Salt

Make a "Dredge" Bowl with the Kikkoman and 2 Eggs.
Beat until exhausted.
Make another Large 'Dredge Bowl' containing:
2-3 cups of Progresso Bread Crumbs
1 tsp of Lawrey's Seasoned Salt
1 tsp of AMERICAN Curry
1/2 tsp of garlic powder
Mix well with fork, spatula or table spoon
until dizzy
Veggie scrub brush the 4 Baking potatoes -SKIN ON and slice in half

Prepare a baking pan (I use aluminum pans fully lined with one sheet of heavy duty foil)
drizzle a bit of veggie oil on the bottom of roasting pan (I use Corn oil)
Dredge Chicken breasts one at a time in Kikkoman+Egg Bowl (actually I leave each breast piece in the sauce for as long as I can stand it-and turn the breast a few times i.e 3-4 minutes --a couple of minutes for each side --letting the chicken absorb the the flavor of the sauce.)

Dredge breast in bread crumb mix OR It is MUCH easier to place marinated chicken in the baking pan and sift the bread crumb mix over the breasts in the baking pan!
Arrange chicken in pan-- leaving room for the potatoes on an end or each side of the baking pan
Place the potatoes cut or 'open-flat side' down in with the chicken
Bake at 350 for about 35-45 minutes
(For more moist chicken Cover pan with Foil for the first 15-20 minutes. This ALSO prevents the bread cumb mix from getting that 'burned' look)
Serve with a vegetable of your choice
