French or Cuban bread (1 1/2 to 2 inch pieces)
Tomato, Fresh basil, Course ground pepper
Mozzarella cheese ( sliced is best).

Directions:
Directions:
Heat oven to 400º. Place cut bread on a non-stick cookie sheet. Layer with a slice of tomato, a leaf or two of basil, a dash of pepper and a slice of cheese. Bake until cheese melts then serve.

When Joe and Glo moved their family to Tucker, GA, Uncle Nelson drove the U Haul truck with Joe. He was such a help to us, we couldn't wait for him to visit us again and to bring Sally with him. Sally was a wonderful cook. Their main meal of the day was lunch and Uncle Nelson didn't know that sandwiches even existed. Sally's meals were Cuban and Italian specialties and we were so delighted when she cooked for us that week. Bruchetta was just the beginning of an extensive meal she could put together.
