Ingredients: Boil together: . 6-8 small potatoes(peeled and cubed) 2 small onions(chopped) 1 carrot(coined) 2 stalks celery(chopped) 4 chicken bouillon cubes 1/2 tsp salt 1/4 tsp pepper 1 tbsp parsley flakes 1/3 cup margarine or butter 1 bag of frozen peas (See additional ingredients below)

Directions:Add to boiled veggies: 3/4 cup margarine or butter 1 1/2 cups milk 2/3 cup flour 1-2 cups grated cheddar cheese
Boil above ingredients together until veggies are tender. Drain water into a container (you will use some of this later). In a separate pan mix margarine, milk, grated cheese and flour. Stir often until thick. Add to boiled veggies. Stir well until mixed. You can add some of your left over drained water to adjust the consistency of your soup. I like mine thick! Serve in medium hard rolls hollowed out like bread bowls. |

Notes: This is a recipe we have often in the cold fall/winter months. I cannot wait until the first day of fall so I can start making potato cheese soup. This is also I recipe from my mom, who got it from a friend when she lived in Ephraim.
