1 medium orange
6 tbsp butter
1 sm onion
1 tbsp parsley flakes
1/2 tsp basil
1/8 tsp pepper
2c soft bread crumbs (about 4 slices of bread)
1 whole red salmon, dressed and heads removed
salt
1 can (6 oz) frozen orange juice, defrosted

Directions:
Directions:
Slice half of the orange; peel and chop remaining half. In a small glass bowl, combine the butter, onion, parsley, basil and pepper. Cook on high in the microwave for 2 1/2-3 minutes or until onion is tender. Stir in bread crumbs and chopped orange. Arrange fish in a glass (13x9) cake pan, season inside of fish with salt, and spices to your liking. Stuff cavity with bread crumb mixture. Cover with wax paper and cook in the microwave on high for 15-20 minutes. Pour orange juice over fish; add the slices to the top of the fish and cook in microwave for another 2 minutes on high and then serve.
