Chinese Lemon Chicken Recipe

1 T. oil
1 lb. Boneless skinless chicken breast cut strips
12 oz. frozen stir fry vegetables or fresh
1 (4 serving size) lemon flavor Jell-O
1 T. cornstarch
1/2 c. chicken broth
2 T. Kraft Zesty Italian dressing
2 cloves garlic, minced
1 tsp. fresh squeezed lemon juice (optional)

Heat oil medium high heat, add chicken. Cook 4-5 minutes until cooked through, stirring occasionally.

Add stir fry vegetables stir 2 minutes. Mix dry gelatin and corn starch in small bowl. Add broth, dressing, lemon and garlic; stir until gelatin is dissolved. Add to skillet.

Reduce heat to medium; cook 3 minutes or until sauce is thickened, stirring frequently. Serve over hot cooked rice.
