Dressing
3/4 c. cider vinegar
1/2 c. salad oil
1 c. sugar
1 tsp. salt
1/2 tsp. pepper
1 T. water

1 can black-eyed peas
1 can pinto beans
1 can garbanzo beans
2 cans dark red kidney beans
1 small onion, chopped
1 c. celery, chopped

Directions:
Directions:
Mix dressing ingredients together and bring to a boil. Cool. Drain all beans and mix with celery and onion. Pour cooled dressing over the mixture and refrigerate overnight. Add pimento and green pepper for variety. Before serving on lettuce, drain.
Undrained, this is a good topping for a tossed salad.
