3/4 c. sugar, divided
1/3 c. flour
dash salt
3 eggs, separated
2 c. milk
2 t. butter or margarine
1 t. vanilla
45 vanilla wafers
5 medium-ripe bananas, sliced

Directions:
Preheat oven to 350 degrees. In top of double boiler combine 1/2 c. sugar, flour and salt. Blend in 3 egg yolks and milk. Cook uncovered over boiling water until thickened (10-12 minutes), stirring constantly. Remove from heat, stir in butter and vanilla. Spread a small amount of custard in bottom of 1 1/2 quart baking dish. Layer 1/3 each of vanilla wafers, bananas and custard. Continue layer until all of wafers, bananas and custard have been used, ending with custard on top.

Beat egg whites with electric mixer on high until soft peaks form. Gradually add remaining 1/4 c. sugar, beating until stiff peaks form. Spoon over custard. Spread evenly over entire custard and edges, sealing well. Bake 15 to 20 minutes or until lightly browned. Cool slightly before serving.
