1/2 c butter
1-1/2 c sugar
2 eggs
2 ounces red food coloring
2 T cocoa
1 tsp salt
1 tsp vanilla or rum flavoring
1 c buttermilk
2 -1/2 c sifted cake flour
1 -1/2 tsp soda
1 T vinegar

Icing:
5 T flour
1 c milk
1 c sugar
1 c butter
1 tsp vanilla

Directions:
Cake: Crème together sugar, eggs, butter. Make a cocoa and food coloring paste and add to creamed mixture. Mix salt, flavoring, and buttermilk and add alternately with flour to creamed mixture. Mix soda & vinegar and fold into mixture immediately. Pour quickly into greased and floured cake pan (s). For a 9 X 13 pan bake at 350 for 30 minutes. Frosting: Cook flour and milk in heavy saucepan stirring constantly to avoid even fine lumps from developing until thick like a paste. Let cool. Cream together butter, sugar and vanilla. Add to cooled flour mixture and beat until the consistency of whipped cream. Spread on cooled cake. (Okay, truth time, I usually make 1 ½ or double the frosting recipe!) The original recipe only calls for 3 T of flour to 1 cup of milk for the frosting—maybe YOU can make that develop into a “thick paste”!)

Think Valentine’s Day! This cake is a bit of a pain to make, which may be why my husband likes it. That and the frosting.
