New red potatoes
Fresh shelled garden peas
Flour
Milk
Salt or salt substitute & pepper to taste
(Thin sauce ratio: 1 T butter (or butter substitute), 1 tbsp flour, 1 c milk. Medium sauce ratio: 2 tbsp butter, 2 tbsp flour)(see directions)

Scrub then boil small “new” red potatoes, skins on, until fork tender. Shell peas and cook until tender with a very small amount of water in microwave. Combine peas in the pan with cooked potatoes. Make a white sauce of flour, milk, butter and salt and pepper, heating until thickened. Stir into potatoes and peas.
