1 Ham Hock
1 cup of dried split peas
1 cup of dried white beans
1 cup of dried red beans
2 large onion, chopped
3 Cups chopped carrots
4 cloves of garlic, diced
3 lbs of Luinguica (Portuguese Sausage)
2-3 Sweet Potatoes, peeled and cut up
2-3 Russet Potatoes, peeled and cut up
1 head of cabbage, cut into smaller pieces
4 large bunches of Kale, cut into small pieces
1 cup Acini De Pepe Macaroni ( comes in box)
2 cans of split pea soup
2 Bay Leaf
Salt & Pepper to taste

Directions:
Rinse all beans thoroughly.Soak in water overnight. Put all beans in a pot, add water and bring to boil. Boil for approximately 15 min. Set aside until ready for soup.

In large soup pot add chopped onion, garlic, sausage & ham hock. Saute until the sausage is looking yummy! Drain the beans and rinse. Add the beans to the pan. Cook for 15 min, stirring occasionally. Now, add the potatoes & carrots then cook (saute) until the potatoes are covered with seasoning from the cooked sausage. Add bay leaf.
Add water, pot should be 2/3 full at this point. Let cook for 30 min. bringing to a boil. Add cabbage, kale & acini de pepe macaroni! Salt and pepper. This soup should cook for approx. 2 hours. Add pea soup the last half hour!

This soup should be served with crusty bread and butter!
