1 1/2 cups rice, uncooked
1 can chili beans
l green pepper
l red pepper
l yellow pepper
1/2 large onion
3 chicken breasts (cajun flavored from the Hy-Vee meat dept)
barbeque sauce
chili powder to taste
tobasco sauce to taste

Directions:
Directions:
chop and dice peppers and onion. Simmer in hot oil in frying pan until partially cooked. Add beans and spices (not barbeque sauce yet).

Cook rice. Bake chicken in oven with barbeque sauce in pan covered with foil. Cook about 25 minutes, turn chicken over and cook another 25 minutes. Chop up chicken . Add the bean-pepper-onion mixture to the chicken. Stir in the rice.
