4 Tablespoons butter
1 medium onion finely chopped
1 large can chicken stock (about 1 quart)
1 head of cauliflower cut into small pieces
1/2 cup shredded carrots
salt and pepper to taste
2 cups milk
1/4 cup flour
1/2 teaspoon Worcestershire sauce
1 teaspoon curry powder
8 ounces Velveta cheese

Directions:
Directions:
Saute butter and onions until tender, add broth, cauliflower, carrots, and salt and pepper. Bring to a boil and simmer until cauliflower is cooked. Use an electric mixer and break cauliflower up into tiny pieces. Mix cold milk and flour together until smooth, add to boiling soup. Add remaining ingredients and heat through. Garnish with shredded cheddar cheese.
