1 lb. lean ground beef
1/2 cup chopped onion (optional)
2 cans beef broth
2 cans Italian tomatoes (diced)
1 tsp. oregano or Italian seasoning
16 oz. frozen mixed vegetables
Salt and Pepper to taste (optional)

Directions:
Directions:
Brown the ground beef and onions. Drain well.
Add all other ingredients and bring to a boil. Simmer 45 minutes.

This soup is thick - you can add more broth if you like it "soupier". If allowed to stand in refrigerator for a day or two - is more flavorful. Freeze leftovers!
