San Fran Chicken Recipe

3 chicken breasts (cut into thin 3 oz each)
1 1/2 cups of rice
1 can 98% fat free cream of chicken soup
6 large broccoli spears (1 frozen box)
1 8 oz bag of grated skim mozzarella cheese

Directions:
Directions:
Spray 9x13" pan with Pam. Pour rice on bottom of pan. Mix soup with 1 1/2 cups of water and pour 1/2 of mixture over the rice. Then place broccoli spears separately on the rice. Drape chicken breast over broccoli. Pour remaining soup mixture over the chicken. Salt to taste. Cover with tin foil. Cook 45 minutes at 425º.

Remove and spread cheese on top of casserole. Put back in the oven uncovered for 15 more minutes or until cheese is melted to a nice brown.

Cut into 6 servings and add a salad for a complete meal.
