2 lbs. peeled baking potatoes, cut into 1-inch pieces
1 8-oz tub fat-free cream cheese
1/2 c. plain fat-free yogurt
1 tsp. salt, or to taste

2 T butter or margarine, melted
1/2 tsp. paprika

Directions:
Directions:
Place potatoes in saucepan, add water to cover & bring to a
boil. Cover, reduce heat & simmer 20 minutes or until very
tender; drain. Combine potato, cream cheese, yogurt and
salt in a bowl, beat with mixer at medium speed until smooth.
Adjust seasonings and spoon into 11x7 baking dish coated
with cooking spray, and drizzle butter over potato mixture.
Sprinkle with paprika. Cover and chill.

TO SERVE: Let stand at room temp for 10 minutes.

Preheat oven to 350º.

Bake, uncovered, at 350 for 30 minutes or until thoroughly
heated.
