18 large plum tomatoes (about
1/2 c. olive oil
3 1/2 lbs), halved lengthwise
2 T chopped fresh parsley
2 T chopped fresh basil
1 T chopped fresh rosemary
1 T chopped fresh thyme (or 1-2 t. dried)

Directions:
Directions:
Preheat oven to 350º. Place tomatoes, cut side up, on
rimmed baking sheet. Brush tomatoes with oil. Mix herbs
and sprinkle half of herb mixture over tomatoes. Season
with salt and pepper.

Roast tomatoes until tender and slightly brown around
edges, about 1 hour 15 minutes. Sprinkle with remaining herbs.

This is tasty, particularly when made in the summer when the plum tomatoes are at their flavorful best. Can be served warm or at room temp--whatever works for you.
