3 - 4 Russett Potatoes
1 large onion
1 large bell pepper
1 T oil
Seasoning Salt

Directions:

Peel and chop the potatoes - Or cut in wedges
Chop the onion and pepper
Place in a non-stick skillet, the potatoes, onion and pepper along one tablespoon of oil.
Cook on a medium heat and stir constantly.
When the potatoes become slightly soft - add
the seasoning salt to taste.

This recipe came from my Father, Howard Trapp.
Yeap, that's right. Daddy was often accused of mixing up all kinds of unusual dishes that no one would risk trying. However, this one was a safe one.
My children would find him in the kitchen preparing his potatoes from time to time and loved it. I now
use this dish at breakfast when the entire family comes around. It is a good addition to the normal grits, eggs, bacon, ham, and gravy.
