1 Small chicken - cooked and chopped
2 stalks of celery
1/2 cup of slivered almonds
1/2 cup of salad dressing
1 hand full of white seedless grapes
1/2 cup of pineapple chunks

Directions:
Directions:
Take the meat of one cooked chicken, chop coursely
Chop the celery
Slice the grapes into halves
Mix the chicken, celery, salad dressing; mixing the grapes and almonds last. Place in refrigerator
before serving.

This was a chicken salad recipe given to me by Brother-in-law, Bernard "Jeff" Jeffrey. He is the deceased husband of my sister Gladys, and father to four beautiful children. He passed away in 2004, and I truly miss him. As our family affectionately called him "Jeff", he was a talented Chef. Back in the day, he and Josephine would occupy the kitchen during Christmas. When Moma passed away, he began to share recipes with me. This is one of my favorites. He was not only my Brother-in-law, he was my friend, and confidant. Jeff was born and raised in Louisiana. I had the pleasure of meeting his parents who were descendents of the orginial French settlers. They spoke fluent French. Jeff possessed the typical vibrant personality of people from that region. I loved him for his love for The United States Marine Corp - he was a Retired Gunnery Sgt. Jeff also had a great love for his family, life, and food! While serving in the Marines - he was in charge of preparing meals for Presidents of the USA. He was just that great!
