4 - Chicken breasts - charcoal grilled
2 Boiled eggs
1 small onion
1 large stalk of celery
2 T of salad cubes
3/4 cups mayonaise

Directions:

Grill until done - 4 chicken breasts
Boil eggs while chicken is being grilled
Chop the onion, celery, and eggs
Once the chicken is completely cooked, allow it to cool. Once it is cooled, chop in large chunks.
Place in a large bowl for mixing
Dump the onion, celery, and eggs
Pour in the salad cubes and mayonaise.
Mix until lightly moist, place in refrigerator for approximately 30 minutes before serving.

This is an excellent dish to serve over a bed of lettuce. Garnish with sliced tomatoes, your favorite crackers and fresh seedless grapes!
During the summer of 2004, I wanted to prepare chicken salad differently, so I started using grilled chicken breast. I tried it on my family, and they really enjoyed eating this version. This is my husbands' favorite, so he says! You should try it also!
