Fresh Green beans
1 large onion
2 pieces of smoked turkey
2 - 3 small red potatoes (optional)
Seasonings: salt, pepper, sugar

Directions:
Directions:
Prepare 1 - 2 lbs. of fresh green beans. Wash, snipe the ends off and cut. Dice the onion. In a large dutch oven, bowl 1 - 2 pieces of smoke turkey; allow to cook for 30 minutes. Add slight dash of salt, sugar, and pepper in the water. When the turkey appears to be done, throw in the cut beans and onion. Cook for one hour until the beans are done to your specifications.
If you like to add the potatoes, peel each, and slice in 3 parts and allow them to cook with beans until they are tender.

Fresh vegetables were always served in the Trapp's house. Josephine was strick when it came to preparing a balanced meal. She would always say; "There always has to be something green on your plate." Most of my family cooks this way. This was her way of training us to eat our vegetables... Today, I do not serve my family a meal unless it includes at least one vegetable.
