3 eggs
2 cups sugar
1 cup vegetable oil
1 teaspoon vanilla
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
4 cups grated apple

Topping:
1/2 cup sugar
1 Tablespoon cinnamon
2 teaspoons flour
1/4 cup butter

Directions:
Directions:
Mix eggs, sugar, oil, vanilla, baking soda and salt together. Put in grated apple and 3 cups of flour; mix together, then place ingredients into 3 small loaf pans that have been sprinkled with 1/2 of topping ingredients. Sprinkle remaining topping on dough and place in oven at 350º for 1 hour. Remove from oven and let stand until cool. This recipe can also be made with rhubarb instead of apples.
