6 pork chops
1 cup salsa
1/8 cup soy sauce
1 cup black beans
1 cup corn
1 cup red pepper, chopped
1/2 cup onions, chopped
cilantro, to taste
jalapeņo, to taste
chipotle sauce, to taste

Directions:
Directions:
In a large freezer bag, toss the pork chops with salsa and soy sauce. Let marinate for a few hours.

Mix black beans, corn, red peppers, onions, cilantro, jalapeņo and chipotle sauce.

Either grill or broil the pork chops.

Serve pork chops garnished with black bean salsa.

Note: This is a great meal to prepare in advance. Instead of marinating for a few hours, just freeze the pork chops in the large freezer bag and the black bean salsa in a small freezer bag (both can be placed in another large freezer bag). Then one day before you plan to cook it, remove from the freezer to defrost, and voila dinner is almost ready.
