2 c. rice, cooked
1/4 c. butter
2 Tbl. flour
1 c. milk
pimentos, opt.
1 lb. chicken, cut in strips
1 c. peas, heated through

Cajun spice blend:
1/4 tsp. each black pepper, white pepper, cayenne pepper, garlic powder, paprika, salt

Directions:

Over low heat melt 2 Tbl. butter. Stir in flour and cook 2 minutes, stirring. Slowly add milk and 3/4 tsp. of the cajun spice blend. Cook, stirring until thickened. Keep warm.
In another pan melt remaining butter; add chicken and season with remaining cajun spice blend. Saute until chicken is done. Keep warm.
In a bowl gently stir rice, peas, and pimento together. Spoon chicken over rice and serve with prepared sauce.
