6 oz. uncooked angel hair pasta
1 small zuchini, quartered and sliced
1 medium onion, chopped
1 medium green pepper chopped
1 small sweet red pepper, chopped
4 garlic cloves, minced
1/4 cup reduced-fat butter, cubed (I use about 2 tablespoons
2 tsp. dried oregano
1 tsp. dried basil
1 T. grated parmesan cheese

Directions:
Directions:
Cook pasta according to package directions. Meanwhile in a large nonstick skillet coated with cooking spray, saute the zuchini, onion, peppers and garlic until tender. Add the shrimp, cook and stir 2-4 minutes or untill shrimp turn pink. Stir in butter, oregano and basil. Drain pasta, add to skillet and toss to coat. Sprinkle with parmesan cheese.

When I make this recipe, I buy the shrimp already cooked and deveined so I add it last and just heat til its warm. You don't want to overcook the shrimp or it can get tough. The last time I made this, I used 100% whole wheat angel hair pasta and that was really good. More nutritious.
