8 medium potatoes
2 tbsp. butter
1 large onion, chopped
2 tbsp. chopped green pepper
2 tbsp. flour
1 can cosomme' (or beef broth)
1 1/2 c. light cream, milk, or half & half
salt & pepper to taste
1/2 c. grated cheddar cheese
1/4 c. fine bread crumbs
2 tsp. butter

Directions:
Directions:
Boil potatoes, peel and slice or cube (not to small). Melt butter in frying pan, add onion and green pepper and cook till lightly brown. Add flour, stir till well mixed. Then add consomme' and cream or milk all at once. Stir and cook till smooth. Season to taste. Butter baking dish, add potatoes, cover with sauce. Mix crumbs with butter, sprinkle on top. Top with cheese. Bake 25 minutes at 350º or till hot and bubbly.
