1 3oz. pkg. strawberry gelatin, 2/3 C sugar
1/4 C cornstarch (mix with 3 Tbsp. cold water to dissolve)
1 1/2 C water
1 pt. fresh strawberries, 1/2 block cream cheese
1/2 C powdered sugar, 9" pie shell, baked

Directions:

In a medium saucepan, combine gelatin, sugar, cornstarch and water.

Cook and stir constantly over medium-high heat until mixture is clear and bubbling. Let mixture cool and thicken slightly.

Meanwhile, mix cream cheese and powdered sugar until smooth.

Spread mixture over the bottom of the cooled pie shell. Wash, hull and cut strawberries in half.

Layer the strawberries over cream cheese mixture in pie shell. Pour cooled gelatin over the berries.

Chill until firm.

Serve with whipped cream or whipped topping.
