2 lb Hamburger
1 medium onion, chopped
1/2 green pepper, chopped
2 tsp. salt
1/2 tsp. pepper
1 cup regular rice or 2 cups minute rice
1 quart tomato juice

Directions:
Directions:
Mix together 1st 6 ingredients and shape into small balls. Put into casserole dish or 9"x 13" pan. Cover with tomato juice. Cover and bake at 350º for 1 1/2 hours or until rice is tender. Uncover last 15 minutes of baking so some of the juice is absorbed.

I make big batches of these, shape and put on cookie sheets in the freezer. Then I put them in ziplock bags. An easy meal to pull out! You should thaw before adding tomato juice and baking.
