1 med egg plant pared and sliced 1/4 in slices
1 c parmesan cheese
1 c mozzarella cheese
1/3 med purple onion chopped
3 T chopped mix of red green and yellow peppers
1 large jar marinara sauce
1 small jar roasted red pepper sliced
1/2 t minced garlic
garlic powder to taste
flour
salt
seasoned Italian bread crumbs
2 eggs beaten
milk
extra virgin olive oil
1/4 lb crumbled Italian sausage

Directions:
Directions:
Saute onion and garlic til tender. Add Roasted Red Pepper and bell pepper mixture and saute til tender. Add 2 cups marinara sauce and simmer to blend flavors. Cook crumbled Italian sausage til brown. Dip egg plant in flour to coat, then in egg and milk mixture, then in bread crumbs to coat. Fry in hot olive oil til browned. Put a layer of marinara sauce in the bottom of a 9 x 13 pan. Layer with cooked egg plant then cover with marinara and vegetable mixture. Sprinkle on Italian sausage then top with cheeses and bake in 375º oven to 25 minutes until bubbly.
