Ingredients: 1 bakers loaf uncut white bread, 1 bakers loaf rye bread uncut, 3 C shredded cheddar cheese, 1/2 C mayo, 1/2 C Miracle Whip, 1 small jar gherkin sweet miniature pickles,1 tsp onion powder

Directions: |
Directions:To prepare bread, slice off crust on all 4 sides. Cut lengthwise 1/2 inch to make rectangles. 1 loaf of bread will yield 4 slices(rectangles). In med bowl blend Cheese, mayo, Miracle Whip, and onion powder. If too dry to spread, add more mayo/Miracle Whip. Mix,well. Spread cheese mixture over sliced bread. Now slice sweet mini pickles lengthwise & place end to end a row of pickles the length of rectangle.(start about 1/4" in.from edge) Roll lengthwise ending with seam on bottom. Roll to wrap in wax paper & seal with plastic wrap. Put in fridge to congeal. Take out & slice into 1/4 " pieces. |

Notes: These yummy "pinwheel" sandwiches have been enjoyed since I was a little girl (and even before then!). Our Mom, Betty Schultz, has continued the tradition started by HER Mom, and, for me, it just wouldn't be the Holidays without 'em!! Thanks, Mom! =) There's another filling you can use -- ham! For this filling, you use canned Canadian ham (use a grinder) in place of the cheese. Mmm mmm good!
