GARLIC, 1 whole head + (10-12 lg. cloves)
OLIVES, 12-14 oz green Spanish olives w/pimentos
(save the brine)
8 oz Cream Cheese, 8oz Nefatchuel cheese
2 tbsp milk (for creaminess)

Directions:
Bring cheese to room temperature. Peel, crush and mince entire head of garlic. Mom would say you can never use too much garlic here, but when your tongue burns and your eyes water, its generally a sign you've found your personal limit. =>) Drain olives (save the brine) and coarse chop. Blend cheese, olives & garlic well, add a small amount of brine while mixing to get a smooth yet thick texture. Taste frequently to avoid over salting the dip with the brine. Last, blend in milk and beat till creamy as desired with small bits of olive and pimentos still visible. Chill until slightly set, serve with crackers or chips.
