Lemon Bread Recipe

1/2c. shortening

1c. sugar

2eggs

1 1/4c. flour

1tsp. baking powder

1/4tsp. salt

1/2c. milk

1tsp. grated lemon rind

Directions:
Directions:
Grease and flour one large loaf pan.

Preheat oven to 350º.

Cream together shortening and sugar.

Beat eggs, then add to sugar and shortening and beat mixture.

Sift together the flour, baking powder and salt.

Add dry ingredients alternately with milk just until moistened.

Stir in the lemon rind.

Bake 350º for 35-40 minutes or until toothpick comes out clean.

Remove baked bread from oven and pierce the top all over with a fork.

Pour the following mixture over the top
1/4c. sugar mixed with 2T. lemon juice

Let bread cool throughly before removing from pan.
