Swiss Enchiladas Recipe

2T. oil

1 onion, chopped

2 cloves garlic, minced

2c. tomato puree

2 canned green chiles, chopped

2c. cooked chicken, diced

Salt and pepper

6 chicken bouillon cubes

3c. hot cream

1/2lb. Jack cheese, grated

1 dozen tortillas

Avocado for garnish

Directions:

Saute in 2T. oil the onion and the garlic.

Add the puree, chiles, and chicken. Season with salt and pepper.

Fry 1 dozen tortillas in about 1 inch of oil. Do not let them crisp.

Dissolve bouillon cubes in hot cream.

Dip each tortilla in this, cover generously with chicken filling and roll up.

Arrange rolls in baking dish and pour remaining cream mixture over the enchiladas.

Top with jack cheese.

Bake in 350 degree oven for 30 minutes.

Garnish with avocado.
