1 stick butter
1 cup water
1 cup flour
4 eggs

Directions:
Directions:
Preheat oven to 425ºF.
Bring butter and water to a boil in a sauce pan. Remove from heat. Add the flour beat thoroughly with a wooden spoon. Move batter to a glass bowl Add the eggs, one at a time beating well before adding another. Spoon balls onto a well-greased cookie sheet.
Bake at 425 for 25 minutes reduce heat to 300º and bake for another 35 minutes. Let cool, slice and remove any inner membrane that is not cooked.

This was a special dessert when we were kids, filled with ice cream and covered with chocolate sauce. Now one can get them in fancy restaurants as Profiteroles.
