Fresh pork roast
Spinach
lemon
white wine
garlic
olives

Directions:
Directions:
Cut off the two ends of the roast, now cut 1/3 of the way of the roast lay open then back 1/3 and lay open. rub olive oil on the interior. In large pan put small amount of olive oil then the spinach , add garlic, lemon juice , white wine and cook down . when finished put in opened pork roast. Add the olives and roll the roast , tie with string , put in frying pan and braising until nice and brown. Then bake in oven 350 for about one hour. Serve with sauce that follows.

I serve with Bordelaise Sauce. 2tbs butter, 1 tbs onion minced, 3 tbs flour , 1 tbs parsley chopped, 1/4 teas. dried thyme, 1/8 teas black pepper, 1 101/2 oz. can condensed beef consomme' , 1/2 cup dry red wine, 1/4 cup water
