Ingredients:  
1st Layer:
1 box orange Jell-O
1 box lemon Jell-O
1 can crushed pineapple, drained (reserve liquid)
1 carrot, grated
Dissolve jell-o in 1½ cups boiling water. Add ½ cup cold water. Add pineapple and grated carrot. Pour into a container and refrigerate until set.

2nd Layer:
1 cup sugar
2 tbsp flour
2 eggs, beaten
1 cup of reserved pineapple juice (If necessary, add water to make one cup)
Heat over low to medium heat until thick. Cool and add to Jell-o layer.

3rd Layer:
1 carton Cool Whip
1 (8 oz) package cream cheese, softened
Mix together until smooth. Pour over 2nd layer.

4th Layer:
Grate Sharp Cheddar Cheese to cover the Cool Whip & Cream Cheese layers.
