Filling:
1 cup granulated sugar
1 cup brown sugar, firmly packed
5 (8-oz each). Packages cream cheese (do not use “No or Low Fat” variety)
¼ cup evaporated milk
5 eggs
Cream sugars and cream cheese until smooth and creamy. Add eggs, one at a time, beating until well blended. Add milk. Pour into crust lined pan.

Crust:
10-12 ounces plain butter cookies, crushed
3-4 tablespoons of melted butter
Crush butter cookies in blender until crumbs are fine. Mix with melted butter. With fingers, press into a 9” spring form pan.

Topping:
½ cup brown sugar (packed)
1 cup pecans (chopped)
¼ cup maple syrup
Mix pecans and sugar. Sprinkle over cheesecake. Drizzle syrup on top.

Bake in preheated 425 degree oven for 10 minutes. Reduce heat to 300 degrees and bake for an additional 45 minutes. When done, turn off heat and allow cake to stand in oven overnight. Remove the next morning, transfer cake to plate and chill.
