3 eggs
2 cups flour
2 cups sugar
1 Tbsp Cinnamon
1 cup vegetable oil
1 cup chopped walnuts or pecans
(3/4 cups is all I use)
1 Tbsp. Vanilla
2 cups loosely packed, coarsely
grated zucchini squash

Directions:
Directions:
Beat egg until they are frothy. Beat in sugar, oil and vanilla and beat until thick and lemon colored. Stir in squash. Add dry ingredients. Fold in nuts. Pour into 2 (oil and floured) loaf pans 3 x 4 ½ x 3. Bake at 350 degrees for 1 hour or until center is no loner doughy. Let cool in pan for 10 minutes. Freezes well
