˝ Large sweet Onion, Chopped
4-5 Green onions, chopped
1-2 Jalapeno pepper (remove seeds)
2-3 Tbsp Cilantro, chopped
Green Pepper (can use red &/or yellow pepper)
Plum Tomatoes, chopped
2-3 Cloves garlic, fresh, minced
3-4 Tbsp Olive oil
2-3 Tbsp Vinegar
1-1˝ Tbsp Sugar
1-1˝ tsp Salt, to taste
1 Jar Picante Sauce

Directions:
Directions:
Chop all the veggies, add the spices and then add the Picante sauce. Mix all together and refrigerate.
If you need to expand the recipe, add a can of salsa.

You can also add black-eyed peas (drained and rinsed), yellow corn (drained) and/or black beans (drained and rinsed).
