1 lb. boneless pork loin, cubed
1 pkg. dry taco seasoning
1 T. oil
8 oz. salsa
4 T. peach preserves

Directions:
Directions:
Shake to coat pork cubes in taco seasoning inside ziploc bag. Heat oil in skillet on medium heat, add pork and cook until browned. Add salsa and peach preserves, stir to mix well, cover and lower heat. Simmer gently for 15 minutes. Serve over rice.
