1 tsp. olive oil
1 diced onion
1/4 lb. diced ham
4 c. hot chicken broth
1 can crushed tomatoes and green chilies (like Rotel), 1 (9 oz.) pkg. refrigerated cheese tortellini
1 can kidney beans (drained and rinsed)
1/4 tsp. basil leaves
1/4 tsp. oregano
1/4 tsp. black
1 pkg. fresh or frozen (thawed) spinach
2 tbsp. Parmesan

Directions:
Saute onion and ham in olive oil. Add all but spinach and simmer 5-10 minutes. Add spinach until hot. Sprinkle bowls of soup with grated cheese, serve with salad and hot bread.
