1 lg carrot
1 stalk celery
3 med onions
4 qts chicken stock
1/2 c dark roux
2 cloves garlic minced
1 pkg frozen sliced okra
1 1/2 c smoked sausage sliced 1/2 in cubes
1 lb boneless chicken breast in 1 1/2 in cubes
1/4 t red pepper
1/2 t black pepper
1/2 t salt
1/2 beau monde (or celery salt)
1/2 t garlic powder

Directions:
Directions:
Mince and cook vegetables in 1/2 c chicken broth until crisp tender. Add remaining broth and seasonings. Bring to a rolling boil and add roux a tablespoon at a time stirring to mix. Cook sausage in microwave for 2 minutes, drain and add to pot. Add okra and simmer until almost done. Season chicken and dredge in flour and fry til done. Add chicken to pot during last 5 minutes of cooking. Serve over rice.
