Oatmeal Cake Recipe

1 1/4 C boiling water
1 C regular oats
1 stick + 1 T butter
mix together and let stand 20 min.

1 C sugar
1 C brown sugar
2 eggs slightly beaten
combine in a large bowl w/oatmeal mixture

1 1/3 C flour
1/2 t salt
1 t soda
1/2 t nutmeg
1 t cinnamon
mix with above ingredients

bake 350 for 45 min in 9 x 13 pan


7 T butter cream
2/3 sugar

1/2 C cream add
1 t vanilla

2/3 C coconut mix
1 C walnuts

spread on top of cake, put back in oven under broiler until bubbly. watch carefully so it doesn't burn
