1 dozen eggs
6 large mushrooms, sliced
1 small red onion
1 box, frozen chopped spinach
Tabasco Sauce
3 cups Monterey Jack cheese

Directions:
Directions:
In a large bowl, scramble all eggs. Add chopped onion, mushroom, strained spinach, 2 tsp. Tabasco Sauce and 3 cups shredded Jack cheese. Mix all together and pour in a 9x13 casserole dish sprayed with Pam. Bake at 350 degrees for one hour or until eggs are set.

This is great served with muffins and sliced fruit for Christmas morning. It can be prepared the evening before and put in the oven in the morning. It may take 10 minutes longer to cook.
