3 lb. ground beef
3 eggs
1 c. bread crumbs
1 c. tomato sauce-divided
2 onions -finely chopped
2T. fresh basil
1T. fresh thyme
1 T. garlic-minced
2 tsp. Dijon mustard
2 tsp. salt
1 tsp. pepper

Directions:
Directions:
Preheat oven to 400ºF. Combine beef, eggs, bread crumbs, and 1/2 c. tomato sauce. Add onions. Mix dry ingedients in separate bowl. Add to beef mixture. Pack into large loaf pan. Invert pan over roasting rack ( or broiler pan) with pan underneath to catch grease. Cook for 30 minutes. Reduce heat to 350ºF. Remove loaf pan and baste with 1/4 cup tomato sauce. Cook 45 minutes. Baste again with 1/4 cup tomato sauce. Serve. Delicious with mushrooms and mashed potatoes.
